Definition
Net carbs is total carbohydrate minus fiber — the carbohydrate that is actually digested and absorbed as glucose. Fiber passes through mostly undigested, so it does not contribute to the glucose response the way other carbohydrates do:
net carbs = total carbohydrate − fiber
Why People With Diabetes Care About It
Two foods can list the same “total carbohydrate” on a label while behaving very differently: a food whose carbs are mostly fiber produces a gentler response than one whose carbs are mostly sugar. Net carbs is a quick way to estimate how much usable carbohydrate is in a serving — and it is the basis of the glycemic load formula, which uses available (net) carbohydrate.
Where It Gets Tricky
- Labels don’t always separate the two clearly — in many countries, “carbohydrate” on the label already excludes fiber.
- Sugar alcohols (erythritol, xylitol, maltitol) are sometimes subtracted too, but they are not all inert — maltitol in particular raises glucose measurably. Treat “net carb” claims on packaged snacks with suspicion.
- Fiber isn’t fully inert — some types ferment and can still influence glucose indirectly, and high-fiber processed foods (e.g., some “low-carb” bars) may not behave like a lentil stew.
