The One-Paragraph Answer
GI tells you how quickly a carbohydrate food tends to raise blood glucose relative to a reference (glucose = 100). GL tells you how much glucose response a real serving of that food is likely to produce, because it multiplies the GI by the amount of available carbohydrate in the serving. A food can have a high GI but a moderate GL (watermelon), or a moderate GI but a high GL (a full cup of white rice).

Worked Example: Why Both Matter
Watermelon: GI ~76 (high). A 2-cup portion carries ~21 g of carbohydrate, so GL ≈ 16 (moderate). Bananas: GI ~51 (moderate). A medium banana gives a GL of ~12 (moderate). White rice: GI ~73 (high) and a cup gives a GL of ~32 (high).
Judging these foods by GI alone would rank watermelon as the worst. By GL — with realistic portions — rice is the one that demands the most attention.
Which One Should You Use?
For day-to-day decisions, GL is usually more useful because portions vary. But both have the same fundamental limitation: they are population averages, not predictions of your glucose response.
